Both text types support a wide range of properties for customization. You can change the font family, size, style (bold, italic), color, alignment, and more. You can also apply transformations such as rotation, scaling, and skewing, just like with other Fabric.js objects. The main difference comes down to whether you want your text to be editable by the user or not.
